Bianco’s stated ambition is dinner at a traditional Italian grandmother’s table — then it sets that table with Italian marble and antiques on downtown Edmonton’s prettiest pedestrian street. The result is Rice Howard Way’s most graceful dining room: nonna’s generosity, dressed for the evening.

The Story

The team behind Rosso — the city’s wood-fired Neapolitan pizzeria — built Bianco in the Phipps-McKinnon Building as the refined counterpart: same obsession with dough and ingredients, more candlelight. The founding creed is printed into everything the kitchen does: good food starts with good ingredients, and good ingredients are best handled by passionate people. Here that means flour milled organic and unbleached, pasta rolled by hand, nothing rushed.

What to Order

Fresh pasta is the heart — firm, light, sauced richly — with hand-stretched pizzas a genuine rival, all built in-house from organic, non-GMO flour. Antipasti open the meal properly, the cheese-wheel pasta finished tableside on select evenings supplies the theatre, and the cellar runs deep: Italian bottles, Italian-inspired cocktails, and a sparkling-by-the-glass program vast enough to make prosecco a personality trait.
