Sabor: Two Friends, One Ocean
Sabor tastes like a story because it is one: two boys from Edmonton’s north end — one born in Chile, one in Portugal — grew up, went their ways, and came back to open the city’s defining Iberian dining room. Since 2008, in the historic Boardwalk Building downtown, chef Lino Oliveira has been cooking the food of his Portuguese childhood while Christian Mena, a former singer and stage performer, runs the front of house like the host of a very good party.
The Story
Oliveira learned his craft the unteachable way — beside his mother, the village women and the fishermen of Portugal’s northern coast — and that inheritance shapes every menu. The founders’ creed, “Flavour. Feeling. Friendship.”, isn’t marketing; it’s the operating system of a room where family-style platters and no-fuss hospitality are policy.
What to Order
Seafood is the mother tongue: the lobster risotto and paella are the signatures guests cross the city for, and the daily fish honours whatever the (Ocean Wise certified) suppliers landed. The piri piri chicken carries the Portuguese flame, tapas open the evening properly, and the Iberian wine cellar — sherry to Douro — deserves a slow read.
The Space
